Primary Purpose of Job: Develop and execute plan to establish in-house food service program at multiple facilities. Responsible for staffing, training, vendor selection, daily operations and fiscal management. Position ensures program operates in a cost efficient manner and complies with all applicable laws and contractual obligations, including local health and sanitation codes as well as Department of Health \'DOH\' standards.
Principal Duties & Responsibilities:
1. Oversees daily operations of food service program, menu planning and cafeteria management for
multiple facilities; Oversees commissary staff and operations at designated facilities; creates and
oversees food service training programs for residents;
2. Ensures rotating menus for facility residents that comply with contracts and supervising authority
standards and governmental health agencies\' requirements;
3. Ensures adequate inventories/supplies of food, meal preparation materials and cleaning supplies;
Reorders supplies when necessary ensuring that adequate food stuffs are available in accordance
with planned menus;
4. Inspects kitchen operations for cleanliness and sanitized state of all food preparation areas
including but not limited to sinks, refrigerators, freezers, stoves, kitchen cabinets, storage rooms,
plus all food preparation surfaces;
5. Ensures that the appropriate number of meals are prepared for residents and staff and that meal
trays and bag meals are ready for residents with schedules outside the normal meal times of the
facility;
6. Audits the packaging, labeling and storage of all meats and other food stuffs appropriately for
freezing or other storage;
7. Oversees the security procedures and maintenance for equipment; maintains limited access to
food service areas by unauthorized personnel;
8. Schedules all staff hours; Provides training for a variety of the field\'s concepts, practices and
procedures; Provides evaluations for staff; Fills in for absent staff when necessary;
9. Responsible for a cost efficient food services program through budgetary monitoring procedures.
Bachelor\'s degree in restaurant and food service management preferred plus five years experience in an institutional food service environment. Certified Foodservice Management Professional \'FMP\' preferred. Valid driver\'s license. Basic computer keyboard skills required and knowledge of word processing and spreadsheet software packages such as MS Word and MS Excel.
Facilities located in industrial areas. Frequent statewide business travel required. On call for special and unusual events. Position requires periods of sitting due to distance driving to and between state facilities; position also requires some standing and walking; frequent lifting of up to 25 lbs. and occasional lifting of up to 50 lbs. Requires good visual and auditory acuity for monitoring safety and cleanliness of food services area.
